Create VPN Client and pass it as VLAN

I want to set up an EdgeRouter with two [PPTP or L2TP] VPN connections to different servers and be the gateway to my network but pass those connections to the network via VLANs.

 

Say, an L2TP connection to a server in France a be the gateway (DHCP server) to that VPN link on VLAN 2, then another L2TP link to Mexico and host the DHCP server on VLAN 3.

 

I'd like to do all this on GUI but I'm extremely confused. This is very easily done with a couple of cheap TP-Link routers but I though maybe I'd take a more elegant approach—and a lot less cabling—using an EdgeRouter.

 

I tried first setting up a VPN link with my existing EdgeRouter (the one I'm talking about will be a new router) but I couldn't even do that. My VPN providers only give me an address, username/password and secret, not routing information or subnets or the like. So the farthest I got was creating an interface.
